Paneer Makhani


Sure! Here's a recipe for Paneer Makhani, a popular Indian dish:


Ingredients:

  • 200 grams paneer (Indian cottage cheese), cut into cubes
  • 2 tablespoons ghee (clarified butter) or vegetable oil
  • 1 medium onion, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 2 medium tomatoes, pureed
  • 1 teaspoon Kashmiri red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon dried fenugreek leaves (kasuri methi)

  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro leaves for garnish

For the marinade:

  • 2 tablespoons yogurt
  • 1 teaspoon Kashmiri red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions:

  1. In a bowl, combine the ingredients for the marinade. Add the paneer cubes and gently toss to coat them with the marinade. Let it marinate for at least 15-20 minutes.

  2. Heat 1 tablespoon of ghee or oil in a pan over medium heat. Add the marinated paneer cubes and cook until they turn golden brown on all sides. Remove the paneer from the pan and set it aside.

  3. In the same pan, add the remaining tablespoon of ghee or oil. Add the chopped onions and sauté until they turn translucent.

  4. Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell disappears.

  5. Add the tomato puree to the pan and cook for a few minutes until the mixture thickens and the oil separates.

  6. Stir in the Kashmiri red chili powder, turmeric powder, and garam masala. Cook for another minute to allow the spices to release their flavors.

  7. Add the dried fenugreek leaves (kasuri methi) and mix well.

  8. Reduce the heat to low and slowly pour in the heavy cream, stirring continuously to prevent the cream from curdling. Season with salt according to your taste.

  9. Add the cooked paneer cubes to the pan and gently stir to coat them with the creamy sauce. Simmer for 2-3 minutes, allowing the flavors to meld together.

  10. Garnish with fresh cilantro leaves and turn off the heat.

Your Paneer Makhani is now ready to be served. Enjoy it with naan, roti, or rice!

Note: You can adjust the spices according to your taste preferences. If you prefer a milder version, you can reduce the amount of red chili powder.
