Bhel-pohe

Ingredients:

  • 2 cups Poha (flattened rice)
  • 1/4 cup roasted peanuts
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup finely chopped cucumber
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons nylon sev (thin fried chickpea noodles)
  • 1 tablespoon green chutney
  • 1 tablespoon tamarind chutney
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon red chili powder (optional)
  • Salt to taste
  • Oil for tempering
  • Lemon wedges for garnish




Instructions:

  1. Rinse the poha under running water in a colander for about 30 seconds. Drain the water completely and let it sit for 5 minutes. The poha will soften during this time. Fluff it gently with a fork to separate the grains.

  2. Heat oil in a small pan and add the peanuts. Fry them on medium heat until they turn golden brown and crispy. Remove from the heat and set aside.

  3. In a large mixing bowl, add the fluffed poha, chopped onions, tomatoes, cucumber, coriander leaves, and roasted peanuts. Mix well.

  4. Add the green chutney and tamarind chutney to the poha mixture. Toss everything together until all the ingredients are well coated.

  5. Sprinkle chaat masala, roasted cumin powder, red chili powder (if using), and salt over the mixture. Give it a gentle mix to distribute the spices evenly.

  6. Taste and adjust the seasoning according to your preference.

  7. Garnish the Bhel Poha with nylon sev and coriander leaves.

  8. Serve the Bhel Poha immediately with lemon wedges on the side. Squeeze some lemon juice over the Bhel Poha before eating to enhance the flavor.
