Ingredients:
- 1 liter full-fat milk
- 1/2 cup sweetened condensed milk
- 1/2 cup powdered sugar
- 1/2 cup chopped almonds (blanched and peeled)
- 1/2 tsp cardamom powder
- A pinch of saffron
- Kulfi molds or small plastic cups
- Ice cream sticks
Instructions:
- In a heavy-bottomed pan, heat the milk on medium heat until it comes to a boil. Keep stirring occasionally to prevent the milk from sticking to the bottom of the pan.
- Once the milk comes to a boil, reduce the heat to low and let it simmer until it reduces to half its original quantity.
- Add the sweetened condensed milk and powdered sugar to the milk and stir until well combined.
- Add the chopped almonds, cardamom powder, and saffron to the mixture and stir well.
- Remove the pan from the heat and let the mixture cool to room temperature.
- Pour the kulfi mixture into the kulfi molds or small plastic cups and insert an ice cream stick into each one.
- Freeze the kulfi for at least 6 hours or overnight.
- To serve, dip the molds or cups in warm water for a few seconds to loosen the kulfi, and then remove from the molds or cups.
- Serve the badam kulfi chilled and enjoy!
Note: You can also add other nuts like pistachios or cashews to the kulfi mixture if you like. Also, if you don't have kulfi molds or plastic cups, you can use popsicle molds instead.
