Amajira Kheer Recipe





Certainly! Here's a recipe for Amajira Kheer, a delicious Indian rice pudding:

Ingredients:

- 1/2 cup Basmati rice

- 4 cups milk

- 1/2 cup sugar (adjust according to taste)

- 1/4 cup chopped almonds

- 1/4 cup chopped pistachios

- 1/4 cup raisins

- 1/4 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 1 tablespoon ghee (clarified butter)

- A few rose petals for garnish (optional)

Instructions:

1. Wash the rice thoroughly and soak it in water for 30 minutes. Drain the water and set the rice aside.

2. In a large heavy-bottomed pan, heat the ghee over medium heat. Add the drained rice and sauté for 2-3 minutes until the rice turns slightly golden.

3. Pour in the milk and bring it to a gentle boil, stirring occasionally to prevent the rice from sticking to the bottom.

4. Reduce the heat to low and let the rice cook in the milk for about 30-40 minutes, or until the rice is soft and the milk has thickened, stirring occasionally. Make sure to scrape the sides and bottom of the pan to avoid any sticking or burning.

5. Add the sugar, chopped almonds, pistachios, and raisins to the pan. Stir well to combine and let it cook for another 5-10 minutes until the sugar dissolves and the kheer thickens further.

6. Crush the saffron strands (if using) and dissolve them in a tablespoon of warm milk. Add this saffron milk to the kheer, along with the cardamom powder. Stir well to distribute the flavors evenly.

7. Cook the kheer for an additional 5 minutes, allowing the flavors to meld together.

8. Remove the pan from the heat and let the kheer cool to room temperature. It will thicken further as it cools.

9. Once cooled, transfer the kheer to a serving bowl or individual bowls. Garnish with a few rose petals (if desired) and sprinkle some chopped almonds and pistachios on top.

10. Refrigerate for a couple of hours or until chilled. Serve cold and enjoy the delicious Amajira Kheer!

Note: You can adjust the sugar quantity according to your preference. Additionally, you can add a few drops of rose water or a pinch of nutmeg for extra flavor if you like.
