Ingredients:
- 4 eggs
- 4 medium-sized English Simpal Recipes tomatoes, finely chopped
- 1 onion, finely chopped
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons cooking oil
Instructions:
Boil Eggs: Start by boiling the eggs until they are hard-boiled. Once boiled, peel them and set aside.Hindi Simpal Recipes
Prepare the Curry Base:
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions and green chilies. Saute until onions turn translucent.
Add Spices:
- Add ginger-garlic paste and saute for a minute until the raw smell disappears.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for a couple of minutes.
Cook Tomatoes:

Prepare Curry:
- Once the tomatoes are cooked, add about 1 cup of water to adjust the consistency of the curry. Bring it to a gentle boil.
Add Eggs:
- Carefully slice each boiled egg into halves and gently place them into the simmering tomato curry.
- Stir gently to coat the eggs with the curry. Let it simmer for another 5-7 minutes on low heat to allow flavors to meld.
Finish and Serve:
- Sprinkle garam masala powder and garnish with freshly chopped coriander leaves.
