Vanilla and Nutmeg Baked Rice Pudding

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup raisins (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (about 2-quart size) with butter.

  2. Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it cool slightly.

  3. Prepare the Pudding Mixture: In a large mixing bowl, whisk together the milk, heavy cream, sugar, vanilla extract, ground nutmeg, salt, and eggs until well combined.

  5. Pour into Baking Dish: Pour the rice pudding mixture into the prepared baking dish. Spread it out evenly.
