English Simpal Recipes |
Ingredients:
- 500g diced stewing beef
- 250g lamb or English Simpal Recipe sbeef kidneys, cleaned and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery sticks, diced
- 200g mushrooms, sliced
- 2 tbsp tomato paste
- 500ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil
- 2 sheets of ready-rolled puff pastry
- 1 egg, beaten (for egg wash)
Instructions:
Preparation:
- Preheat your Hindi Simpal Recipes oven to 200°C (400°F).
- Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat with a little olive oil.
Cooking the Meat:
- Season the diced beef with salt and pepper.
- Brown the beef in batches in the pot until well-seared on all sides. Remove and set aside.
- In the same pot, add the diced kidneys and cook for 2-3 minutes until browned. Remove and set aside with the beef.
Sautéing Vegetables:
- In the same Marathi Simpale Recipes pot, add a little more oil if needed and sauté the onions, garlic, carrots, and celery until they begin to soften, about 5 minutes.
- Add the mushrooms and continue to cook for another 3-4 minutes until mushrooms are tender.
Combining Ingredients:
- Return the beef and kidneys to the pot. Stir in the tomato paste, Worcestershire sauce, and dried thyme.
- Pour in the beef stock and bring to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer gently for about 1.5 to 2 hours, or until the meat is tender and the sauce has thickened. Stir occasionally.
Assembling the Pie:
- Once the filling is ready, transfer it into a pie dish or individual pie dishes.
- Roll out the puff pastry sheets on a lightly floured surface. Use one sheet to cover the pie dish(es), trimming any excess pastry.
- Brush the edges of the pastry with beaten egg to help seal the pie.
- Make a few small slits in the pastry to allow steam to escape during baking.
Baking:
- Place the pie dish(es) on a baking sheet (to catch any drips) and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.
Serving:
- Remove from the oven and let it cool for a few minutes before serving.
- Serve hot, optionally with mashed potatoes and steamed greens.
