Pad Thai is a famous Thai dish, which uses noodles, vegetables, and various sauces.
Pad Thai Recipe
Materials:
200 grams of rice noodles
2 tbsp oil
1 onion, finely chopped
1-2 garlic cloves, finely chopped
1 carrot, finely chopped
1 capsicum, finely chopped
200g tofu, cut into small pieces
2 eggs
2 tablespoons of peanut butter
2 tablespoons of soy sauce
1 tablespoon of tamarind paste
1 tablespoon brown sugar
1/2 cup soaked bean sprouts
Lemon juice
A handful of peanuts, chopped
Green onion leaves, finely chopped
Garnish with fresh coriander leaves

Cooking noodles: Soak rice noodles in hot water for 8-10 minutes or cook according to package instructions. Then strain them and keep aside.
Sautéing Vegetables: Heat oil in a large pan. Saute onion and garlic until golden. Then add carrot and capsicum and saute for 2-3 minutes.
Fry the tofu: Add the tofu pieces and fry for 2-3 minutes, until they turn slightly golden in colour.
Add the egg: Set aside the vegetables and tofu on one side of the pan. Pour some oil into the empty space and crack an egg into it. Scramble the egg, then mix everything together.
To make the sauce: In a small bowl, combine the peanut butter, soy sauce, tamarind paste, and brown sugar. Add this mixture to the pan.

Seasoning: After mixing everything, add lemon juice. Garnish with peanuts, green onion leaves, and fresh coriander leaves.
To serve: Transfer to hot pad thai plates and garnish with fresh lemon wedges.
Tips:
You can vary the vegetables as per your preference.
If you don't like tofu, you can make it with chicken, shrimp or bean meat substitutes.
