Coconut and Raspberry Jam Roly-Poly
Ingredients:
For the dough:
- 225g (8 oz) self-raising flour
- 100g (3.5 oz) English Simpal Recipes shredded coconut
- 100g (3.5 oz) cold butter, diced
- 2 tablespoons sugar
- 150ml (5 fl oz) milk
For the filling:
- 6 tablespoons raspberry jam
- 50g (1.75 oz) shredded coconut
For serving:
- Custard or cream (optional)
Instructions:
Preheat the oven: Preheat your oven to 200°C (400°F) or 180°C (350°F) if using a fan oven. Line a baking sheet with parchment paper.
Prepare the dough:
- In a large mixing bowl, combine the self-raising flour, shredded coconut, and sugar.
- Add the Hindi Simpal Recipes diced cold butter to the flour mixture. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.
- Gradually add the milk, mixing until a soft dough forms. Be careful not to overwork the dough.
Roll out the dough:
- Lightly flour a clean surface and roll out the dough into a rectangle about 1 cm (0.4 inches) thick.
- Ensure the dough is even and not too thin to prevent tearing.
Add the filling:
- Spread the Marathi Simpale Recipes raspberry jam evenly over the rolled-out dough, leaving a small border around the edges.
- Sprinkle the shredded coconut evenly over the jam.
Roll up the dough:
- Starting from one of the longer sides, carefully roll the dough into a log shape, similar to a Swiss roll.
- Pinch the ends to seal and place the roll seam-side down on the prepared baking sheet.
Bake the roly-poly:
- Bake in the preheated oven for 25-30 minutes, or until the roly-poly is golden brown and cooked through.
- If the roly-poly starts to brown too quickly, cover it loosely with a piece of aluminum foil.
Serve:
- Allow the roly-poly to cool slightly before slicing.
- Serve warm with custard or cream, if desired.
