Coconut and Raspberry Jam Roly-Poly

Ingredients:

  • For the dough:

    • 225g (8 oz) self-raising flour
    • 100g (3.5 oz) English Simpal Recipes shredded coconut
    • 100g (3.5 oz) cold butter, diced
    • 2 tablespoons sugar
    • 150ml (5 fl oz) milk
  • For the filling:

    • 6 tablespoons raspberry jam
    • 50g (1.75 oz) shredded coconut
  • For serving:

    • Custard or cream (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 200°C (400°F) or 180°C (350°F) if using a fan oven. Line a baking sheet with parchment paper.

  2. Prepare the dough:

    • In a large mixing bowl, combine the self-raising flour, shredded coconut, and sugar.
    • Add the Hindi Simpal Recipes diced cold butter to the flour mixture. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.
    • Gradually add the milk, mixing until a soft dough forms. Be careful not to overwork the dough.
  3. Roll out the dough:

    • Lightly flour a clean surface and roll out the dough into a rectangle about 1 cm (0.4 inches) thick.
    • Ensure the dough is even and not too thin to prevent tearing.
  4. Add the filling:

    • Spread the Marathi Simpale Recipes raspberry jam evenly over the rolled-out dough, leaving a small border around the edges.
    • Sprinkle the shredded coconut evenly over the jam.
  5. Roll up the dough:

    • Starting from one of the longer sides, carefully roll the dough into a log shape, similar to a Swiss roll.
    • Pinch the ends to seal and place the roll seam-side down on the prepared baking sheet.
  6. Bake the roly-poly:

    • Bake in the preheated oven for 25-30 minutes, or until the roly-poly is golden brown and cooked through.
    • If the roly-poly starts to brown too quickly, cover it loosely with a piece of aluminum foil.
  7. Serve:

    • Allow the roly-poly to cool slightly before slicing.
    • Serve warm with custard or cream, if desired.
