Chicken Madras is a flavorful and spicy curry dish from the Indian subcontinent. Here's a basic recipe to make Chicken Madras at home:

Ingredients:

  • 500g boneless chicken, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped or pureed
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated or minced
  • 2-3 green chilies, finely chopped (adjust according to your spice preference) English Simpal Recipes
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2-3 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

For the marinade:

  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Juice of half a lemon

Spice blend (Masala):

  • 1 teaspoon turmeric powder
  • 2 teaspoons chili powder (adjust to taste)
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon fenugreek seeds (optional, but recommended)
  • 1/2 teaspoon ground black pepper

Instructions:

  1. Marinate the chicken:

    • In a bowl, mix the yogurt with turmeric powder, chili powder, ground cumin, ground coriander, and lemon juice.
    • Add the chicken pieces to the marinade, coat well, cover, and refrigerate for at least 30 minutes (you can marinate longer for more flavor).
  2. Prepare the spice blend (Masala):

    • In a small bowl, mix together turmeric powder, chili powder, ground coriander, ground cumin, fenugreek seeds, and ground  English Simpal Recipes black pepper. Set aside.
  3. Cooking the Chicken Madras:

    • Heat oil in a large pan or kadai over medium heat.
    • Add cumin seeds and mustard seeds. Let them crackle for a few seconds.

    • Add minced garlic, grated ginger, and chopped green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
  5. Add tomatoes:

    • Add finely chopped or pureed tomatoes to the pan. Cook until the tomatoes are soft and the oil starts to separate from the masala.
  6. Add the spice blend (Masala):

    • Lower the heat and add the prepared spice blend (Masala) to the pan. Mix well and cook for 2-3 minutes until the spices are fragrant.
  7. Add marinated chicken:

    • Increase the heat to medium-high. Add the marinated chicken along with any marinade left in the bowl. Mix well to coat the chicken with the masala.
  8. Cook the chicken:

    • Cook uncovered for 10-15 minutes or until the chicken is cooked through, stirring occasionally. If the mixture becomes too dry, add a splash of water.
  9. Adjust seasoning:

    • Taste and adjust salt and spiciness according to your preference. Remember, Chicken Madras is meant to be spicy!
  10. Finish and garnish:

    • Once the chicken is cooked and the gravy has thickened to your liking, remove from heat.
    • Garnish with freshly chopped coriander leaves.
  11. Serve:

    • Serve hot with steamed rice, naan bread, or roti.
