    • Place plastic wrap over the chicken and pound it to an even thickness using a meat mallet or rolling pin. Season both sides of the chicken with salt and pepper.
  2. Coat the Chicken:

    • Set up a breading station with three shallow bowls or plates. Place flour in the first bowl, beaten eggs in the second bowl, and panko breadcrumbs in the third bowl.
    • Dredge each chicken piece in flour, shaking off any excess.
    • Dip the chicken into the beaten eggs, making sure it's fully coated.

  • Cabbage: Traditionally, shredded cabbage is served with chicken katsu. You can serve it fresh or lightly dressed with a bit of vinegar.
