Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth

  • 1/2 cup uncooked orzo pasta
  • 2 eggs
  • Juice of 2 lemons
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

  2. Add the minced garlic to the pot and cook for an additional 1-2 minutes, until fragrant.

  3. Pour in the chicken broth and bring the mixture to a simmer.

  4. Once the soup is simmering, add the cooked chicken and orzo pasta. Cook for about 8-10 minutes, or until the orzo is tender.

  5. While the soup is cooking, beat the eggs in a small bowl. Slowly pour the lemon juice into the beaten eggs, whisking constantly.

  7. Season the soup with salt and pepper to taste.
