Varai Rice Anarsay Recipe

Varai Rice Anarsay is a traditional Maharashtrian dessert that is typically made during the festival of Ganesh Chaturthi. It is made using varai rice flour (also known as sama rice flour), jaggery, and grated coconut. Here's the recipe:

Ingredients:

- 1 cup varai rice flour

- 1/2 cup grated jaggery

- 1/2 cup grated fresh coconut

- 1/4 teaspoon cardamom powder

- Ghee, for frying

Instructions:

1. In a mixing bowl, combine the varai rice flour, jaggery, grated coconut, and cardamom powder. Mix well.

2. Slowly add water to the mixture, a little at a time, and knead into a soft and pliable dough.

3. Divide the dough into small lemon-sized balls and flatten them slightly.

4. Heat ghee in a deep frying pan on medium heat.

5. Gently add the flattened dough balls to the hot ghee and fry until they turn golden brown and crispy.

6. Remove the anarsay from the ghee and drain excess oil on a paper towel.

7. Serve the varai rice anarsay warm or at room temperature.
