Vada pav is a popular street food from Maharashtra, India, consisting of a deep-fried potato fritter (vada) served in a bread bun (pav). Here's a recipe to make it at home:
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1-2 green chillies, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt, to taste
- A handful of chopped coriander leaves
- Oil, for deep-frying
- 4 pav buns
- Green chutney (optional)
- Tamarind chutney (optional)
- Onion rings (optional)
Instructions:
- Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add ginger paste, garlic paste, and green chillies. Sauté for a minute.
- Add turmeric powder, red chilli powder, and salt. Mix well.
- Add the mashed potatoes and coriander leaves. Mix until everything is well combined. Let the mixture cool.
- Divide the mixture into equal portions and shape them into balls.
- Heat oil in a deep pan. Once hot, add the potato balls and deep-fry until golden brown. Drain on paper towels to remove excess oil.
- Slice the pav buns horizontally and lightly toast them on a griddle.
- Spread green chutney and tamarind chutney on each side of the pav bun.
- Place a potato vada in the center of the bun and press it slightly.
- Serve hot with onion rings and more chutney on the side, if desired.
