Vada Pav


 


Vada pav is a popular street food from Maharashtra, India, consisting of a deep-fried potato fritter (vada) served in a bread bun (pav). Here's a recipe to make it at home:

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1-2 green chillies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt, to taste
  • A handful of chopped coriander leaves
  • Oil, for deep-frying
  • 4 pav buns
  • Green chutney (optional)
  • Tamarind chutney (optional)
  • Onion rings (optional)


Instructions:

  1. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  2. Add ginger paste, garlic paste, and green chillies. Sauté for a minute.
  3. Add turmeric powder, red chilli powder, and salt. Mix well.
  4. Add the mashed potatoes and coriander leaves. Mix until everything is well combined. Let the mixture cool.
  5. Divide the mixture into equal portions and shape them into balls.
  6. Heat oil in a deep pan. Once hot, add the potato balls and deep-fry until golden brown. Drain on paper towels to remove excess oil.
  7. Slice the pav buns horizontally and lightly toast them on a griddle.
  8. Spread green chutney and tamarind chutney on each side of the pav bun.
  9. Place a potato vada in the center of the bun and press it slightly.
  10. Serve hot with onion rings and more chutney on the side, if desired.
