Sabudana Vada

Sabudana vada is a popular Indian snack that is made from soaked and mashed sago pearls. Here's a recipe for making Sabudana vada:

Ingredients:

  • 1 cup sabudana (sago pearls)
  • 2 medium-sized potatoes, boiled and mashed
  • 1/2 cup roasted peanuts, coarsely ground
  • 2-3 green chillies, finely chopped
  • 1 tbsp ginger, grated
  • 1 tbsp cumin seeds
  • 1 tsp lemon juice
  • 1/4 cup chopped coriander leaves
  • Salt, to taste
  • Oil, for deep-frying

Instructions:

  1. Rinse the sabudana in water for a couple of times and then soak it in water for about 3-4 hours, or until it becomes soft and swollen.

  2. Once the sabudana has soaked, drain the excess water and transfer it to a mixing bowl.

  3. Add the mashed potatoes, coarsely ground peanuts, chopped green chillies, grated ginger, cumin seeds, lemon juice, chopped coriander leaves and salt to the bowl. Mix everything together until well combined.

  4. Heat oil in a kadhai or a deep frying pan over medium heat.

  5. Take small portions of the mixture and shape them into small balls. Then, flatten them slightly to form small discs or patties.

  6. Carefully place the patties into the hot oil and fry until they turn golden brown in color.

  7. Use a slotted spoon to remove the fried Sabudana vada from the oil and transfer them onto a plate lined with paper towels to absorb the excess oil.

  8. Serve hot with green chutney or tomato sauce.

Enjoy your delicious Sabudana vada!
