Here's a delicious recipe for a Rainbow Salad:
Ingredients:
- 2 cups of mixed greens (spinach, arugula, lettuce)
- 1/2 cup of cherry tomatoes, halved
- 1/2 cup of shredded purple cabbage
- 1/2 cup of shredded carrots
- 1/2 cup of diced bell peppers (red, orange, and/or yellow)
- 1/2 cup of diced cucumber
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh parsley
- 1/4 cup of sliced almonds
Dressing:
- 1/4 cup of extra virgin olive oil
- 2 tbsp of apple cider vinegar
- 1 tbsp of honey
