Paper dosa is a crispy and thin South Indian crepe made with a fermented batter of rice and urad dal. It is a popular breakfast or brunch dish and is often served with sambar and coconut chutney. Here's a recipe for making paper dosa at home:
Ingredients:
- 1 cup long grain rice
- 1/2 cup urad dal
- 1/2 tsp fenugreek seeds
- Water as needed
- Salt to taste
- Oil for cooking
Instructions:
Rinse the rice and urad dal separately in water and soak them in enough water separately for 6-8 hours or overnight.
Drain the water and grind the urad dal and fenugreek seeds into a smooth and fluffy batter. Add water as needed.
Grind the rice into a smooth batter, adding water as needed. The batter should be slightly coarse and grainy.
Mix the urad dal batter and rice batter together in a large bowl. Add salt to taste and mix well.
Cover the bowl and let the batter ferment in a warm place for 8-10 hours or overnight. The batter should double in volume and become light and airy.
Heat a non-stick or cast iron skillet over medium heat. Dip a ladle into the batter and pour it onto the center of the skillet. Spread the batter in a circular motion with the back of the ladle to form a thin and even crepe.
Drizzle some oil around the edges of the crepe and cook until the underside turns golden brown and crispy.
Flip the dosa over and cook for another minute until the other side turns golden brown and crispy as well.
Repeat the process with the remaining batter, adding more oil as needed.
Serve the paper dosa hot with sambar and coconut chutney. Enjoy!
