Here's a recipe for Egg Curry:
Ingredients:
- 4-6 hard-boiled eggs
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp oil
- 1/4 cup chopped coriander leaves (cilantro) for garnish
Instructions:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add minced garlic and grated ginger, and sauté for a minute.
Add chopped tomatoes and cook until they become soft and mushy.
Add coriander powder, turmeric powder, red chili powder, and garam masala powder. Mix well.
Add salt to taste and 1/2 cup water. Bring the mixture to a boil.
Add hard-boiled eggs and let them cook in the curry for 2-3 minutes.
Garnish with chopped coriander leaves (cilantro) and serve hot with rice or bread.
