Egg Curry


 


Here's a recipe for Egg Curry:

Ingredients:

  • 4-6 hard-boiled eggs
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil
  • 1/4 cup chopped coriander leaves (cilantro) for garnish


Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

  2. Add chopped onions and sauté until they turn golden brown.

  3. Add minced garlic and grated ginger, and sauté for a minute.

  4. Add chopped tomatoes and cook until they become soft and mushy.

  5. Add coriander powder, turmeric powder, red chili powder, and garam masala powder. Mix well.

  6. Add salt to taste and 1/2 cup water. Bring the mixture to a boil.

  7. Add hard-boiled eggs and let them cook in the curry for 2-3 minutes.

  8. Garnish with chopped coriander leaves (cilantro) and serve hot with rice or bread.
