Aloo Paratha is a popular Indian flatbread stuffed with spiced mashed potatoes. Here's a recipe to make it:
Ingredients:
- 2 cups wheat flour
- 1 teaspoon salt
- 1 tablespoon oil
- Water as required
- 3-4 medium-sized potatoes, boiled and mashed
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons chopped coriander leaves
- Ghee or oil for cooking
Instructions:
- In a mixing bowl, add wheat flour, salt, and oil. Mix well.
- Gradually add water to make a soft dough. Knead the dough for 5-7 minutes until it's smooth and elastic. Cover the dough and let it rest for 20-30 minutes.
- In a separate bowl, add mashed potatoes, cumin seeds, coriander powder, red chili powder, garam masala, salt, and chopped coriander leaves. Mix well.
- Divide the dough into equal sized balls. Take one ball and flatten it into a small disc. Dust it with flour and roll it into a circle of about 4-5 inches in diameter.
- Place a spoonful of the potato filling in the center of the circle. Bring the edges of the dough together and seal the filling by pressing it down gently.
- Dust the stuffed dough with flour and roll it into a paratha of about 6-7 inches in diameter. Make sure the stuffing is evenly spread throughout the paratha.
- Heat a tawa or griddle over medium-high heat. Place the paratha on the tawa and cook for 1-2 minutes on each side.
- Spread ghee or oil over the paratha and cook for another minute until both sides are golden brown.
- Serve hot with yogurt, pickle, or any chutney of your choice.
