Carrot Rice Recipe

Ingredients:

- 1 cup basmati rice

- 2 cups water

- 2 tablespoons oil

- 1 small onion, finely chopped

- 2 carrots, grated

- 2 cloves garlic, minced

- 1 teaspoon cumin seeds

- 1 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (optional, adjust to taste)

- Salt to taste

- Fresh cilantro or parsley for garnish (optional)

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

2. Heat oil in a large saucepan or pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.

3. Add the chopped onion and minced garlic to the pot and sauté until the onion turns translucent and lightly golden.

4. Add the grated carrots to the pot and stir-fry for about 3-4 minutes until they begin to soften.

5. Now, add the drained basmati rice to the pot and mix well with the carrot mixture.

6. Sprinkle the turmeric powder and red chili powder (if using) over the rice. Season with salt according to your taste.

7. Pour in the water and bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice cook for about 15-20 minutes or until all the water is absorbed and the rice is tender.

8. Once the rice is cooked, remove the pot from heat and let it sit covered for an additional 5 minutes to allow the steam to redistribute.

9. Fluff the rice gently with a fork, mixing in the carrots evenly. Taste and adjust the seasoning if needed.

10. Transfer the carrot rice to a serving dish. Garnish with fresh cilantro or parsley, if desired.
