Carrot Cabbage Poriyal is a delicious South Indian stir-fry dish made with carrots, cabbage, and a blend of aromatic spices. It is a healthy and flavorful side dish that can be served with rice or roti (Indian bread). Here's a simple recipe to make Carrot Cabbage Poriyal:
Ingredients:
- 1 cup grated carrot
- 1 cup shredded cabbage
- 1 small onion, finely chopped
- 2-3 green chilies, slit lengthwise
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon urad dal (split black gram)
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- Curry leaves
- 2 tablespoons oil
- Salt to taste
- Heat oil in a pan or kadai (Indian wok) over medium heat.
- Add mustard seeds and let them splutter. Then, add cumin seeds, urad dal, and asafoetida. Fry until the dal turns golden brown.
- Add chopped onions, green chilies, and curry leaves to the pan. Sauté until the onions become translucent.
- Add the grated carrot and shredded cabbage to the pan. Mix well.
- Sprinkle turmeric powder and salt over the vegetables. Stir everything together until the spices are evenly distributed.
- Cover the pan and cook for about 8-10 minutes, stirring occasionally. This will allow the vegetables to cook and release their moisture.
- Once the vegetables are cooked and tender, remove the lid and cook for another 2-3 minutes to evaporate any excess moisture.
- Taste the poriyal and adjust the salt and spices if needed.
- Remove from heat and transfer the Carrot Cabbage Poriyal to a serving dish.
- Serve hot with steamed rice or any Indian bread of your choice.
Enjoy the Carrot Cabbage Poriyal as a nutritious and flavorful accompaniment to your meal!
