Carrot Cabbage Poriyal


Carrot Cabbage Poriyal is a delicious South Indian stir-fry dish made with carrots, cabbage, and a blend of aromatic spices. It is a healthy and flavorful side dish that can be served with rice or roti (Indian bread). Here's a simple recipe to make Carrot Cabbage Poriyal:




Ingredients:

  • 1 cup grated carrot
  • 1 cup shredded cabbage
  • 1 small onion, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • Curry leaves
  • 2 tablespoons oil
  • Salt to taste




Instructions:

  1. Heat oil in a pan or kadai (Indian wok) over medium heat.
  2. Add mustard seeds and let them splutter. Then, add cumin seeds, urad dal, and asafoetida. Fry until the dal turns golden brown.
  3. Add chopped onions, green chilies, and curry leaves to the pan. Sauté until the onions become translucent.
  4. Add the grated carrot and shredded cabbage to the pan. Mix well.
  5. Sprinkle turmeric powder and salt over the vegetables. Stir everything together until the spices are evenly distributed.
  6. Cover the pan and cook for about 8-10 minutes, stirring occasionally. This will allow the vegetables to cook and release their moisture.
  7. Once the vegetables are cooked and tender, remove the lid and cook for another 2-3 minutes to evaporate any excess moisture.
  8. Taste the poriyal and adjust the salt and spices if needed.
  9. Remove from heat and transfer the Carrot Cabbage Poriyal to a serving dish.
  10. Serve hot with steamed rice or any Indian bread of your choice.
