Here is a recipe for banana curd bada:
Ingredients:
- 3 ripe bananas
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/4 cup banana curd
- 1 tsp vanilla extract
- Oil for frying
Instructions:
1. In a mixing bowl, mash the ripe bananas until smooth.
2. Add the flour, sugar, baking powder, baking soda, and salt to the bowl and mix well.
3. In a separate bowl, whisk together the eggs, banana curd, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until well combined.
5. Heat the oil in a frying pan over medium-high heat.
6. Using a small cookie scoop or spoon, drop spoonfuls of the batter into the hot oil.
7. Fry the bada until golden brown on both sides.
8. Remove the bada from the oil and place them on a paper towel-lined plate to absorb any excess oil.
9. Serve warm and enjoy!
Note: Banana curd is a type of spread made from mashed ripe bananas, sugar, lemon juice, and butter. If you don't have banana curd, you can substitute it with mashed bananas and add an extra tablespoon of sugar and lemon juice to the batter.
